Like a cookie bar or a Twix bar had a healthy cousin! These paleo, gluten free, grain free and refined sugar free bars are a sweet treat that is loaded with protein thanks to a healthy dose of collagen powder and almond butter.

Ingredients
1 cup almond flour
⅓ c coconut flour
3 tbsp coconut oil, melted and cooled
4 tbsp ChocZero maple syrup, divided
2 tsp vanilla, divided
flaky sea salt (maldon)
2/3 c almond butter
1 scoop Vital Proteins collagen powder
1 tsp raw cacao powder
1 cup Choc Zero dark chocolate baking chips
Directions
Preheat oven to 350F
Line a small glass baking dish with parchment paper
In a bowl combine almond and coconut flours, 3 tbsp melted coconut oil, 2 tbsp maple syrup, 1 tsp vanilla and ½ tsp Maldon sea salt
Spread on parchment lined dish and bake for 10 min until golden. Allow to cool
Meanwhile, combine 1 scoop Vital Proteins Collagen Powder, 2/3 c almond butter, ½ tsp flaked sea salt, 1 tsp raw cacao powder, 1 tsp vanilla and 2 tbsp ChocZero Maple syrup in a bowl. Stir well to combine.
Spread Almond butter protein mixture over cooled crust and freeze 20 min. Cut into bars or squares.
Melt 1 c ChocZero dark chocolate chips with 1 tbsp coconut oil in a double boiler or in the microwave (30 second intervals, stirring until combined)
Using a fork, dip the cookie bars into the chocolate and coat thoroughly. Top with flaked sea salt then return to clean parchment and freeze until firm
