Strawberry Cream Chocolate Cups

These creamy strawberry cups are the perfect sweet treat for Valentine's day! They are gluten, free, refined sugar free and dairy free, but also preservative free so store them in the fridge!

Ingredients

1 cup ChocZero dark chocolate chips

1 tbsp plus 1 tsp coconut oil

1 cup unsweetened coconut flakes

½ pint fresh strawberries, hulled and washed
Directions
Melt choczero chips and 1 tbsp coconut oil over a double boiler or in the microwave (30 second intervals, stirring to check)
Take a mini muffin pan and line with muffin liners. Pour a tsp of melted chocolate in the bottom of each, just enough to coat the bottom. Pop in the freezer for 10 min to set
Meanwhile, in a high speed blender or food processor, combine coconut and strawberries plus 1 tsp melted coconut oil (cooled). Blend until well combined in a paste
Using a small spoon, but a ball of the strawberry coconut cream in the center of each mini muffin cup
Pour additional melted chocolate over to cover, and pop in the freezer to set, another 10 min. Store in freezer or fridge.
