This is one of our favorite summer happy hour cocktails—satisfyingly sweet yet tart, super refreshing, and joyously reminiscent of our younger years in the South. However, unlike traditional “lemonade”-based cocktails, this one contains no sugary syrups or artificial flavors so you can sip freely (but responsibly!) without all the guilt. Cheers!
1 c fresh lemon juice (hint: not from a yellow lemon shaped container)
6 c cold water

Directions
On the stovetop, stir together 1 c water and ¼ c honey until honey is thoroughly dissolved.
Add in 1 c chopped mint leaves and muddle
Pour in remaining 5 cups of cold water and 1 c fresh lemon juice. Stir to combine.
In a pitcher, muddle remaining ¼ c mint leaves. Add 4oz vodka and 2 c of honey lemonade, and mix well.
Serve “on the rocks” and enjoy! Feel free to garnish with a cucumber slice or lemon wedge.

Note: To make this cocktail, you must first make our homemade honey lemonade. Hint: this makes 7 servings, so set a few cups aside as an afternoon poolside or post-camp sip for the kiddos, or better yet, freeze into popsicles for a refreshing evening treat!
