Ingredients

2 tbsp dijon mustard

2 tbsp ChocZero sugar free maple syrup

1 tsp EVOO

1 tsp salt
-
½ tsp paprkia
-
4 3-5 oz Wild Caught Salmon filets

10 oz cole slaw blend
-
½ c shredded carrots
-
¼ c shredded cilantro
-
3-4 sliced radishes
-
3 tbsp paleo mayonaise (preferred Primal Kitchen)

1 tbsp apple cider vinegar
-
1 tbsp ChocZero paleo honey
-
1 tbsp lemon juice
-
salt and pepper to taste
Maple Mustard Glazed Salmon
Lemony Cole Slaw
Directions
Maple Mustard Salmon
Preheat Oven to 400F
Rinse and dry salmon filets and lay on clean, dry baking sheet
Combine all Salmon Mustard Glaze ingredients and rub 1 tbsp over each 4-5 oz filet
Roast skin side down at 400F for about 20 min or until flaky and opaque
Lemony Cole Slaw
In a medium bowl combine mayonaise, apple cider vinegar, paleo honey, lemon juice, and whisk to combine
Add cole slaw mix, shredded carrots, sliced radish and cilantro and toss to coat
Salt and pepper to taste
Recipe Note
Serve salmon with lemony slaw for a bright and balanced meal. Store separately in the fridge for 3-4 days.
