                      Ingredients
-
1 cup quinoa, VERY well rinsed in a mesh colander
-
2 cups unsweetened nutmilk of choice (we like unsweetened vanilla or chocolate)
-
2 tbsp almond butter, if desired
-
3 tbsp ChocZero honey or maple syrup
-
Pinch of Sea Salt
-
1 tsp cinnamon
-
toasted coconut, nuts and fruit to top! ChocZero chocolate chips for a kid-friendly version
Directions
- Bring nut milk and quinoa to a boil over medium high heat in a large saucepan.
- Reduce heat to simmer and cover. Cook 15 min or until most of the liquid is absorbed.
- Remove from heat and fluff with a fork.
- Stir nut butter (if using), maple syrup, cinnamon and sea salt into quinoa while still warm.
- Spoon into ½ cup servings and top with fruit, toasted coconut or other desired toppings!
Recipe Note
Store leftovers in the fridge for up to 3 days.
If your quinoa is bitter- RINSE MORE next time :). The bitter protective coating on quinoa that keeps animals away requires a long rinse under cool water to remove.
