Quinoa Whole30 Compliant and Paleo Friendly "Oatmeal"

This paleo friendly and whole30 version of oatmeal is SO easy to whip up! It is a hearty make-ahead breakfast that is much lower carb than traditional sugary breakfasts. It's dairy free, gluten free and refined sugar free!
Such an easy make ahead breakfast! You can even make it kid-friendly by adding chocolate chips or fruit toppings.

Ingredients
1 cup quinoa, VERY well rinsed in a mesh colander
2 cups unsweetened nutmilk of choice (we like unsweetened vanilla or chocolate)
2 tbsp almond butter, if desired
3 tbsp ChocZero honey or maple syrup
Pinch of Sea Salt
1 tsp cinnamon
toasted coconut, nuts and fruit to top! ChocZero chocolate chips for a kid-friendly version
Directions
Bring nut milk and quinoa to a boil over medium high heat in a large saucepan.
Reduce heat to simmer and cover. Cook 15 min or until most of the liquid is absorbed.
Remove from heat and fluff with a fork.
Stir nut butter (if using), maple syrup, cinnamon and sea salt into quinoa while still warm.
Spoon into ½ cup servings and top with fruit, toasted coconut or other desired toppings!
Recipe Note
Store leftovers in the fridge for up to 3 days.
If your quinoa is bitter- RINSE MORE next time :). The bitter protective coating on quinoa that keeps animals away requires a long rinse under cool water to remove.
