We always say, "If you're starving or miserable, you're doing it wrong" and we mean it! Life is too short for sad diet food! So when one of our newest RESET clients seemed down in the dumps and not enjoying the food we knew we had to come up with a solution.
She had a major pizza/carb craving, that is usually easily satisfied with a compliant pizza crust from Dare to be Different. Sadly, the D2BD crusts are the only commercially available cauliflower crust or gluten-free crust that we've found that is on plan. Most have cheese, potato starch, or rice flour. But admittedly they are expensive, and can only be purchased in bulk and shipped.
So what can you do when you need pizza right this minute? We tinkered and tested and came up with a fantastic cauliflower crust recipe that you can whip up at home in under an hour. It's compliant as a RESET lunch or lunch/dinner on any subsequent phase so get ready to put this one in the rotation! As always, our recipes are gluten-free, dairy free and paleo and keto friendly!
1 12 oz bag frozen cauliflower rice. Whole Foods has a Frozen Riced Cauliflower Pilaf Style that works well.
2 eggs
1 tbsp finely ground flaxseed
2 tbsp coconut flour
½ tsp each oregano, garlic powder, and basil
red pepper, salt and pepper to taste
1 c veggies of choice- we used broccoli, red pepper, onion, tomato
Marinara sauce of choice (no dairy or cane sugar- we like Raos)
Optional in ADAPT and LIVE: 1 oz Violife feta or mozzarella cheese
Directions
Place a pizza stone in a cold oven and preheat to 450F
Meanwhile, defrost cauliflower rice by heating on stove or microwave. Allow to cool then using a cheesecloth or dishtowel press all the water out until bone dry. * This part is critical as cauliflower has a high water content and if you don’t do it properly you’ll have a soggy crust!
In a food processor combine cauli rice, two eggs, coconut flour, flaxseed and spices. Blend until it forms a paste.
On a piece of parchment paper spread the dough into a circle. Slide parchment onto hot pizza stone and bake 20 min until brown. For the best flavor, roast your veggies of choice alongside while you par bake the crust.
Top with marinara sauce and roasted veggies and vegan cheese (if desired in ADAPT and LIVE) and bake for 15 more min until brown and bubbly
