This light and bright spring salad is SO fresh, sweet and flavorful! It's even better because it can be made and dressed ahead of time and hold up for a few days in the refrigerator. Because brussels can be a bit bloating, we recommend serving with a few cups of tossed greens like baby butter lettuce as shown here.

Ingredients

6 cups Brussels sprouts, shredded

1 large Honeycrisp apple, cored and chopped

½ minced shallot
- ¼ cup extra-virgin olive oil

¼ cup avocado oil

1/3 cup apple cider vinegar

3 tablespoons ChocZero honey
- 1 teaspoon salt
- ¼ teaspoon freshly ground black pepper

¾ cup toasted pistachios
Directions
Combine olive oil, avocado oil, apple cider vinegar, ChocZero honey, salt, pepper and shallot in a high speed blender and emulsify
In a large bowl combine brussels, apple and pistachios. Pour vinaigrette over salad and toss to coat thoroughly
Cover and refrigerate 6 hours to overnight to soften
Serve chilled! Best to toss over plain greens as shown to reduce macros- and because brussels can be bloating. Add parmesan for guests who have dairy/non paleo
