Paleo Spicy Lime and Coconut Milk Chicken Marinade

Ingredients

3" piece fresh ginger, peeled and grated

4 garlic cloves, minced

1 cup light coconut milk

5 tbsp hot chili paste

½ cup fresh lime juice

zest of 1 lime

1 tsp salt

2 tbsp avocado oil
-
2 tbsp ChocZero brand keto honey

1 lb boneless, skinless chicken breast, sliced (or cubed for skewers)

1 cup cilantro leaves
Directions
Add garlic, ginger, coconut milk, chili paste, lime juice, ChocZero Honey, salt, and 2 Tbsp. oil and whisk to combine. Add chicken and toss to coat. Let sit 2-4 hours.
Remove chicken from marinade and pour marinade into a small saucepan
Bring remaining marinade to a boil over medium high heat and reduce until thickened. Use marinade to baste chicken 1-2 times during grilling .
Heat grill to medium high, and grill chicken 4 minutes each side, until cooked through.
Serve over cauliflower rice, with a steamed veggie or in a wrap, topped with fresh cilantro
