This easy marinade comes together in minutes and makes a flavorful, tender chicken that is perfect for summer grilling season! As always, it is gluten free, sugar free, paleo and keto-friendly and easy enough for a weekday meal.
Paleo Spicy Lime and Coconut Milk Chicken Marinade
Add garlic, ginger, coconut milk, chili paste, lime juice, ChocZero Honey, salt, and 2 Tbsp. oil and whisk to combine. Add chicken and toss to coat. Let sit 2-4 hours.
Remove chicken from marinade and pour marinade into a small saucepan
Bring remaining marinade to a boil over medium high heat and reduce until thickened. Use marinade to baste chicken 1-2 times during grilling .
Heat grill to medium high, and grill chicken 4 minutes each side, until cooked through.
Serve over cauliflower rice, with a steamed veggie or in a wrap, topped with fresh cilantro
